Dedicated kitchen vs. gluten-free menu — why it matters

Under the FDA gluten-free labeling rule, "gluten-free" is a claim about the food — less than 20 parts per million of gluten. It says nothing about whether the kitchen that made it also handles wheat. The Celiac Disease Foundation describes cross-contact — gluten transferred by shared equipment, surfaces, fryers, or airborne flour — as the main risk in food prepared outside the home.

Most national services prepare gluten-free-labeled meals in shared facilities and manage that risk procedurally. Smash Meals has cooked exclusively gluten-free since 2017, which avoids the shared-equipment and airborne-flour pathways rather than managing them. It does not remove every source of risk: ingredients, suppliers, and handling still require controls. A dedicated gluten-free facility is also not an allergen-free facility — dairy, soy, egg, and nuts are handled here, so check each meal's label and follow your own medical guidance.
