What “Dedicated” Actually Means
There are three very different things hiding under the same two words, and the difference matters enormously if you have celiac disease.
Gluten-free menu items — a kitchen that cooks with wheat also cooks a few dishes without it. Shared surfaces, shared fryers, shared air.
Shared facility with protocols — gluten is in the building, but staff follow separation procedures. Better. Still a risk-management exercise.
Dedicated gluten-free facility — nothing containing wheat, barley, or rye comes through the door, so there is no shared gluten-containing equipment or airborne flour to manage.
SmashMeals is the third one. Not a protocol, not a separate prep table — an entire building where gluten is not an ingredient.

Ingredient & Supplier Review
Every new ingredient is reviewed before it is allowed into the building — not after it's already on a shelf. For anything that normally contains gluten, we buy the gluten-free version and verify it: pasta, soy sauce, breading, tortillas, thickeners, marinades. If a supplier changes a formulation, that product goes back through review before it returns to the line.
Allergens Beyond Gluten — The Honest Limits
We will not tell you our kitchen is free of every allergen, because it isn't. Common allergens such as dairy, eggs, nuts, soy, and fish are handled in the facility. If you or your family member manages allergies beyond gluten, call us at 423-525-2489 before ordering and we'll go through the week's menu item by item. Honesty here protects you better than a blanket claim would.

Our facility is self-managed as 100% dedicated gluten-free. That means we don't run a gluten line alongside a gluten-free one — the whole building is gluten-free, every week, with no exceptions. Do you have a shared fryer or shared equipment?
No. We do not bring gluten-containing products into the building — no wheat flour, no regular pasta, no standard breading — and no equipment is shared with gluten-containing production.
Are your desserts gluten-free too?
Yes — Daisy's entire dessert line is gluten-free, like everything else we make.
Is the kitchen certified?
