Let's just say what people are thinking: a lot of gluten-free food tastes like compromised food. Like the version of the meal that had to give something up. Like cardboard had a disagreement with rice flour and called it dinner.
We understand why people think this. And we built Smash Meals to prove it wrong.
The Eighteen-Hour Argument
Most meal prep takes fifteen minutes. Ours takes eighteen hours.
That's how long our beef brisket smokes. Not in an oven. Not in a Crock-Pot. In a smoker, with real wood, managed by someone who has been doing this long enough to know exactly when to wrap it and exactly when to let it ride. The result is a brisket that falls apart at a touch, has a smoke ring you can photograph, and tastes like the best barbecue you've had in years — made in a 100% gluten-free kitchen.
No shortcuts. No fillers. No gluten.
The Founder Is a Pastor and a Pitmaster
Lew Kizer — the founder of Smash Meals — is a United Methodist pastor who smokes brisket and runs a commercial kitchen. His tagline is "Pastor, Pitmaster, and Powerhouse of Purpose." When he talks about the food, he talks about it the way he talks about his calling: with conviction, care, and zero tolerance for half-measures.
His son runs the meat station. His daughter runs the desserts and the kitchen line. This is a family business, a faith business, and a food business — and all three show up on the plate.
Menu Items That Will Change Your Expectations
Here are some of our most-talked-about dishes:
- Garlic Herb Filet Mignon Plate — Yes, filet mignon. In a meal prep container. That's the statement.
- Beef Brisket (18-hour smoked) — The one that converts skeptics permanently
- Shrimp & Cheese Grits — Southern comfort food, gluten-free, extraordinary
- Grilled Chicken with Pesto, Sun-Dried Tomatoes & Goat Cheese — Restaurant-level plating in a meal prep container
- Asian Pulled Pork Bowl — Complex, layered, the kind of flavor that makes you check the container for a restaurant address
- Taste & See Charcuterie Box — Named from Psalm 34:8. Beautiful. And delicious.
What Our Customers Actually Say
With 284+ Google reviews, the language our customers use is remarkably consistent. They don't say "pretty good for gluten-free." They say: "I can't believe this is gluten-free." "Best meal prep I've ever had." "My whole family is ordering now." "Better than most restaurants in town."
That last one is our favorite. Because we're not trying to be the best gluten-free meal prep. We're trying to be the best meal prep — period.
"Convenience Without Compromise." That's not just a tagline. It's a promise we make every week when we open the kitchen and start cooking for you.
"Taste and see that the LORD is good. How happy is the person who takes refuge in him!" — Psalm 34:8, CSB
Good food is a gift. We take it seriously. And we think you'll taste the difference.
